1 Tb. Sugar

2 egg, separated
1 ¾ c. buttermilk
7 Tb. Melted butter

Preheat waffles iron. Mix flour, baking soda, baking powder, salt and sugar in large bowl. Beat egg yolks into buttermilk. Beat egg whites until stiff peaks form. Mix buttermilk into dry ingredients until lumpy. Fold beaten egg whites into batter with just a few strokes into batter with just a few strokes until a lumpy batter forms. Pour batter into hot, greased waffle iron and bake until waffle is brown on both sides and easily releases from the iron. Makes about 6 waffles.
For Buttermilk Pancakes : Decrease butter to 3 Tb. And don't beat egg whites but add with yolks. Cook on hot griddle until small bubbles form, then turn over.
