This is best served fresh so I usually half the recipe for our family and I also add bits of cooked crumbled up bacon as well, it's basically a meal itself.
1 pkg. spinach leaves (One recipe I have recommends baby spinach leaves)
1 cup fresh mushrooms sliced
1 head lettuce
1 small to medium sized red onion, sliced
1 block of grated Swiss cheese.
Toss and chill.
Dressing:
1 Tbsp. poppy seeds
1 tsp. salt
½ - ¾ cup vegetable oil
½ cup white vinegar
¼ cup sugar
½ tsp. Dry mustard
Mix and pour over salad at the last minute.
